AACC to
Hold Carbohydrate Quality Symposium
St. Paul, Minn. (November 18,
2004) – The American Association of Cereal Chemists (AACC) and its
European section, Cereals & Europe, will present the latest technical
information on carbohydrate quality at its Nutritional Importance of
Carbohydrate Quality in Cereal Foods Symposium, February 16-17, 2005 at
Novotel Tour-Noire in Brussels, Belgium.
The symposium will offer an interactive program focused on the
nutritional science of carbohydrates in cereal foods and its current and
expected impact in the European cereal food sector. A panel of
distinguished international experts will address questions pertaining to
how carbohydrates differ, what the glycemic index means, how “low-carb”
should be labeled, and more.
Symposium attendees are invited to participate in a round-table
discussion on the development of a science-based definition of glycemic
carbohydrates. AACC recently formed an ad hoc "Glycemic (Net)
Carbohydrate Definition Committee" to provide a measurable definition
that will enable manufacturers to communicate the glycemic response in
grams per serving of food. Because different approaches are used around
the world, this round table will allow scientists from several countries
to provide input and give feedback to the committee.
