Per Åman is professor emeritus of plant product science in the Department of Food Science, Swedish University of Agricultural Sciences, Uppsala. He was deputy head of the department (1996–2002) and head of the Division of Food Chemistry and Plant Product Science until 2013. He has developed methods for the analyses of dietary fiber components and starch. He has elucidated the structure and properties of different cereal polysaccharides and studied nutritional effects of cell wall–degrading enzymes. He has investigated the health effects of cereal carbohydrates and developed biomarkers for whole grain wheat and rye intake (alkylresorcinols). He has supervised 30 Ph.D. students and published around 400 scientific papers.
