From the Technical Program Chair...
Dear Colleagues,
This year's Technical Program will feature the scientific advancements and marketplace
changes which are transforming cereal science and its impact on cereal utilization.
Improved techniques in biotechnology, material science, instrumentation, to name a few,
are changing the way we work and what we can accomplish. Trade and regulatory trends are
reshaping markets just as advancements in nutrition are altering consumer demand. At the
1999 Annual Meeting, the technology and issues underlying these trends will be presented
by people directly involved.
SYMPOSIA -- AACC Division leadership and 'special' symposia organizers have identified
programs on crucial issues and have succeeded in recruiting outstanding speakers.
Highlights include:
- A special symposium, offered jointly with the ICC, will address moisture transfer in
multiphase foods including the physical basis of crispness and the impact of food
structure on water diffusion.
- The definition of dietary fiber will be the subject of a symposium cosponsored by the
Dietary Fiber and Emerging Issues Committees. This session will culminate discussions held
at the AACC/ILSI workshop in June and an IFT Forum in July as well as input via the AACC
web site.
- A Statistics symposium will present a fresh look at regression and relationships between
measurements concluding with predictions of the outcome of multiple effects.
- Two Protein Division symposia on 1. characterization and functional aspects of glutenins
including subunit structure and interactions and genetic control of subunit composition
and performance; and 2. applications for recent findings about protein structure including
improved flour quality specs, the effect of flour processing on glutenin structure and
applications for wheat antibodies.
- The Nutrition Division symposium will offer data and perspectives on nutritive factors
in cereals including the impact of processing and the food matrix on the availability of
phytonutrients and opportunities for developing unique nutritional profiles with specialty
cereals.
- A special symposium dedicated to fumonisins will include a discussions of toxicology,
stability in corn-based foods and planned official testing by GIPSA.
Additional Symposia will focus on baked products as foams, functional foods;
exemplifying novel uses of grain components; structure-function' relationships in starch
systems; genetic basis of rice quality; innovations in on-line NIR; 'trans' fats,
alternatives to chlorination in cake flours and the use of enzymes as dough conditioners;
cereal fractions with potential benefits for health; and principles and practices of
transgenic crop production.
TECHNICAL SESSIONS -- More than one hundred papers will be presented in sessions
including: Analytical Methods, Baking, Biotechnology, Pasta and Noodles, Engineering,
Gluten, Grains, Milling, New Products, Nutrition, Protein, Rice, Rheology, Starch and
Statistics.
POSTERS -- 'More interactive sessions' was a common request of respondents to last
summer's AACC survey. In response, we're introducing moderated 'forums' for selected
poster presentations on topics of rapid progress and broad impact. These hour-long
sessions will involve brief talks by several poster presenters followed by a discussion
involving a moderator, the presenters and the audience. Four 'poster forums' offered in
succession on Tuesday afterNoon are expected to achieve a new kind of dialog. The
traditional poster sessions will be open throughout the entire meeting.
