The subject will be introduced with a brief history of the use of non-wheat proteins in personal care
products. Chemical compositions of protein ingredients from various sources will be compared. We will
show how current trends make the introduction of wheat-based products very timely. These products consist
of hydrolyzed wheat protein, hydrolyzed wheat protein plus oligosaccharides, quaternized hydrolyzed wheat
protein, wheat amino acids, wheat gliadins, foaming wheat protein, and aluminum wheat starch
octenylsuccinate. The properties of wheat starch and wheat protein raw materials will be discussed. We will
illustrate how these properties were used to develop formulations where wheat products were substituted for
animal proteins. Other formulations will be presented to show the utilization of the special properties of
these raw materials to create unique cosmetic effects. We will briefly discuss a few success stories and
project future direction for these emerging value-added ingredients derived from wheat.
