Starch maleimide esters at low degrees of substitution were prepared by reacting corn starch with maleimide in alkaline aqueous media (pH 8-11). The substitution was confirmed and compared under different reaction conditions using NMR spectroscopy and nitrogen analysis. Pasting behaviors and gel properties of the substituted starches were investigated by a viscoanalyzer and a texture analyzer. Metal binding affinity of the starch products was examined in aqueous dispersions containing various toxic heavy metal ions such as Pb, Cu, Cd, and Hg.
