In Brazil, several food vehicles have been identified as possibilities for a government-promoted non-mandatory large-scale food fortification strategy by the Brazilian Agriculture Research Corporation (EMBRAPA) from the Ministry of Agriculture. Two of the industries identified as capable of producing these carriers were the wheat and corn milling. In order to fully identify their capabilities, it was necessary to evaluate and to assess their infrastructure, their level of technology, their geographic areas of influence, their distribution facilities, their technical know-how for research and development as well as quality control and quality assurance. Furthermore, it is necessary the elaboration of an iron enrichment guiding manual, in order to help the wheat and corn flour mills to set their Quality Assurance Program on iron fortified flours. The guidelines should be actually tested in one wheat and in one corn mill industry, in order to have the final version of the manual as much clear as possible. The published manual will be available free of charge for all corn and wheat mill industries as well as making it possible to be downloaded from Embrapa's homepage.
