Bakery Technologist

Lead technical support for all current and new products and serve as technical resource for management. Develops and prepares new/revised formulations in the product development lab and plant. Must be able to identify potential cost reductions, alternate ingredients and overall formula optimization. Must be familiar with good manufacturing practices in the bakery industry and be knowledgeable about a variety of bakery products. This position will entail project work and the ability to identify potential processing optimization. Participates in group brainstorming for new or revised products and investigates opportunities and ideas for new products. Stays current on new technologies with regard to ingredient functionality and processing via continued education, trade journals and other pertinent sources. Leads development of products from bench to production. Issues specifications for raw materials, formulations, packaging, etc. that are in compliance with FDA and USDA regulations. Ensures all personal product development projects are up-to-date, complete and files are available in a centralized location or are easily attainable. Maintains accurate and organized records and confidentiality of proprietary information. Establishes and maintains contacts with supplier representatives and their technical service departments. Provides technical expertise, as needed, in the evaluation of quality problems. Works with quality assurance and manufacturing to provide timely and effective solutions. Responsible for setting any testing procedures or parameters for measuring results. Keeps product development and storage areas in a neat, orderly and sanitary fashion. Performs special duties and projects as requested.

Bakery science or food science degree - preferred , 3-5 years experience in R&D with a bread or ingredients manufacturer , Knowledge of formulation techniques and ingredient functionality , Experience working with manufacturing personnel and standard manufacturing equipment (Strong floor presence). Experience working with customers on ideation, feedback development, tech support and troubleshooting, Strong organization and documentation skills Proficient Microsoft Office skills (Outlook, Word, and Excel), Solid sensory skills, Culinary and/or Bread production experience is a plus, AIB certification is a plus.
