Context This post doctoral position is linked to the European ongoing research project “EU-FRESHBAKE”. This project aims at developing innovative bread making processes taking into account nutrition, quality and energy demand of the process. http://eu-freshbake.eu/eufreshbake/index.php
Research project
The post doc position is available for 12 months starting from Sept 2008. The objective is to contribute to the development of innovative baking (and also refrigeration) processes applied to bread. Any PhD student having experience in cereal and food science (texture, DSC, …) and/or in food aroma (GC-MS) and/or in food process is welcome to apply. The work activity will be designed in collaboration with ongoing PhD students and in collaboration with partners of the project.
a) Development of an experimental device
Specific baking equipments have been and will be designed to study and to assess the impact of selected parameters during refrigeration and baking steps on bread properties (structure, crust, …).
b) Assessment of bread quality
The candidate should have if possible a good experience in characterization of food quality in general: microstructure, texture, image analysis, colour, … . Other specific tests and techniques will be used (kinetic of staling, texture, calorimetry, aroma …).
c) Experimental design or modelling
Depending on the skill of the applicant, experimental design methodology or modelling of the process may be used to optimise the process conditions and if possible to better understand the bottlenecks of the processes that will be investigated.
Applicant – general conditions
The applicant must be less than 35 years old, and should not be French.
A PhD in food science with skill in food science and/or food process applied ideally to cereal science will be appreciated.
The salary will be 2750 € net per month for a 12 months duration
This financial support includes health insurance but does not include travel costs.
The Post Doc will take place in Nantes at ENITIAA (west of France – 400 km from Paris)
